Steeped cold and slow, it comes out smooth, sweet, and low in acid. Make a batch of concentrate and you’re set for the week.

What you need
- Jar or pitcher
- Coarse grinder
- Fine strainer or filter
- Scale
Combine
Grind 100g coarse and stir into 800g of cold, filtered water until every ground is wet.
Steep
Cover and refrigerate 12–18 hours. Longer steeps pull more strength, so taste to your liking.
Strain
Pour through a fine strainer, then again through a paper filter to catch the fines. Discard the grounds.
Dilute and serve
You now have concentrate. Cut it 1:1 with water or milk over ice, to taste.
Store
Keep the concentrate sealed in the fridge for up to two weeks.
Best with
Bridge
Creamy with bright citrus, and it turns silky and refreshing over ice.
